I adore color, especially in salads. The pop of a red strawberry, the burst of yellow from a juicy piece of pineapple. The bluest blueberry, just makes my heart smile. However, what is a salad without the green?
This is an extremely quick yet healthy dish that is celebrating the green of the salad and nothing more, it’s my salad tout vert!
Start with a blend of your favorite greens, I used arugula, rocket and spinach. Then, add slices of green apple and pear.
I added a handful of chopped walnuts (ok, so maybe not all green) and slivered almonds for a bit of crunch.
Then toss with a bit of olive oil, salt and lemon juice. Top with a bit of parmesan flakes and and a bit more salt. Voila! Simple, easy, beautiful and a crowd pleaser! Feel free to get creative and add some of your favorite greens like brussel sprouts, edamame, green pepper, asparagus or kale and make it your own!
