Can you believe August is almost over? I feel everyone these days is asking “Where has the summer gone?”

I have been so busy that I have been breaking my number one life rule, to stop and enjoy life. Days go by that turn into weeks and you realize you’ve only been to the pool twice and are still as white as you were last winter. Lately though, the weather here has been perfection. Today especially, it reminded me of Barcelona. All I was missing was the salty sea air. After being cooped up indoors all day my body was craving nature (which never really happens) so I left work determined to spend a couple of hours outside. Walks are great but there’s nothing quite like dining al fresco.

Since peaches are abundant here at the local farmer’s market, I was able to snatch a few that came in a beautiful little basket for only two dollars! I decided to get outside and turn on the grill to make these delicious two-bite tapas!

Ingredients
Fresh Peaches
Ricotta
Arugula
Basil
Baguette
Balsamic Vinegar
Sea Salt

GRILLED PEACHE BRUSCHETTA

Toast your bread, either before in the oven at 350 for ten minutes or on the grill itself. Cut your peaches and lay them flat on the grill with a drizzle of olive oil. I cooked these for about ten or so minutes because they weren’t terribly ripe so I wanted them to really soften up. Take the Ricotta and stir it up with a bit of basil and a dash of salt.

When the bread is toasted and the peaches are soft, drizzle some balsamic over the bread, place your peach on top, then add your ricotta. Lastly, add a bit of arugula and add a bit more balsamic.
