Naan, Pita, Pizza, Piadina – flatbread in any forms is delicious and this one was no exception. Looking for an easy recipe tonight, I elected for this take on traditional pizza to go with watching the game tonight. It’s true I crave curry and deep rich flavors come winter and with it being a chilly 33 degrees all day, warm naan sounded perfect.

You can make the naan bread but I did not. I bought homemade naan from a local shop  and it was more delicious than I could have done. The cilantro cream takes a few seconds – blend cilantro, heavy cream, salt and pepper together and set aside. Chop up chicken and roll in a mix of

2 tsp curry powder
a pinch of tumeric
olive oil

Coat evenly and set aside. Warm up a small sauté pan and cook on low heat and preheat the oven to 500 degrees. Meanwhile, coat the naan in the cilantro cream and salt to taste. Layer mozzarella and feta on the naan next. When the chicken is cooked, place on the naan, add a sprinkle of salt and pepper and place in the oven until the cheese is melted, about 8 minutes. When it’s done, take it out and sprinkle with fresh cilantro. Next is the trickier part. Add a teaspoon of canola oil to a pan and warm on low heat. Crack an egg in the center to fry. Make sure you have enough oil to transfer the egg once it’s done. When it is, lay on top of the flatbread. I’m telling you, this part is divine. Necessary, oh so necessary. its makes it from good to great. Add fresh cilantro and enjoy!
